WHY BURL?

In nature, a burl forms through time, resilience, and growth, shaped by its surroundings and made stronger by them.

In the same way, Burl is shaped by the people, partnerships, and place that surround it. We believe restaurants are built with intention and deep roots, and the name Burl reflects what we value.

THE RULE OF 80

At least 80% of our menu is sourced from our local food network. In a perfect world, every ingredient would come from a form we know and a grower we trust. When that’s not possible, we focus on doing the best we can, without letting the great get in the way of the good.

The result is food that reflects our region, our relationships, and gets to the core of how each ingredient is grown. The Midwest has incredible products hiding in plain sight; our job is to seek them out and cook with the same intention they were grown with.
